The Sommelier Knife
· When using the wine waiter’s knife, the screw must be placed vertically in the centre of the cork.
· The corkscrew must be kept straight- in line with the neck of the bottle, to avoid twisting or weakening the knife.
Sommelier and Folding Knives
Cleaning
· A Laguiole folding or sommelier knife should not be washing but it must be wiped with a soft cloth.
· The natural materials used in the handle, such as wood or horn, are sensitive to humidity.
· We recommend that you wipe the various metal parts of the knife with a soft, slightly damp cloth, and then immediately dry.
Maintenance
· To protect the wooden handle – you can apply a little linseed oil to nourish the wood.
· Store the sommelier or folding knife in a cool dry place to protect the natural handles.
· Maintain the mechanism of the knife apply a small drop of oil at the joint between the blade and the spring.
Sharpening
· To maintain the optimum quality of the blade edge, we recommend using a natural stone sharpening stone.
· Moisten the stone for about tens minutes, using a constant pressure and a sharpening angle of 20degrees, slide the blade along the stone.
Table Knives
Cleaning
· To clean the blade use a non-abrasive sponge with washing up liquid.
· Never soak your knives
· Only knives marked as ‘water resistant’ are suitable to be put in the dishwasher. These would be wiped dry afterwards.
Maintenance
· Ideally store knives and cutlery in a knife or cutlery box to ensure they don’t scratch each other.
· To maintain the longevity of the blade you can apply a little bit of cooking oil to the blade to create a protective film.
· Wooden knives can developed a patina over time, use linseed oil to nourish the wood.
